It all started in December 2015 with an idea to create a diner with a difference! With 15 years of hospitality experience running restaurants and bars in Edinburgh, I thought it was time to have a go on my own! My wife Lesley had been running the cafe under another name and we saw an opportunity to improve the current offering. Myself, being from Canada, was desperately looking for something in the South Queensferry area that provided something totally different and satisfied my North American tastebuds! Albeit we have many nice eateries in the area, there was nothing that really pushed the boat in terms of flavour and experimentation. Down the Hatch was born! North American influenced food, with quality locally sourced ingredients!
